I was researching ramen options in my area, specifically around the central part, and I stumbled upon an intriguing ramen restaurant, Tonkotsu Kazan Ramen in Novena that’s quite close to me. What sets this place apart is that they offer ramen not only in traditional bowls but also in clay pots—yes, clay pots!

The soup!
They serve the claypot filled with noodles and toppings, which comes to you steaming hot! The waitress then brings a cone-shaped contraption to pour the soup inside and covers it, creating a show of smoke as it escapes from the cone. I've never witnessed anything like that before!
After a while, she returns to take the cone away and prompts me to stir the contents of the claypot. I was just staring at the bubbling hot pot, completely amazed. With all those hot bubbles, doesn’t it resemble a volcano?
The noodles are slightly thicker than the typical thin varieties—think Hokkien mee. The shoyu ramen especially reminds me of a steaming claypot of Hokkien mee. The noodles are delicious and have a nice chewiness to them. However, the char siu could use some improvement as it was quite average. There’s a generous amount of cabbage and bean sprouts in the mix. I particularly enjoyed the thick shoyu broth; it’s not overly salty and is incredibly tasty!
The waitress makes rounds, and when she notices you’ve finished your ramen, she offers steamed rice to avoid wasting the delicious soup. Isn’t that fantastic? This is the first time I’ve ever felt so full after eating ramen!
