Konjiki Hototogisu 金色不如帰 is the first outlet by the Michelin-starred ramen restaurant originally from Japan. Ha-oh hototogisu is the third outlet in Singapore. The first stall at Chijmes specializes in shellfish broth, however, the third stall at Paragon sells shoyu Asari clam broth and crab broth ramen.
Using Japanese blue crabs boiled and simmered over long hours, the resulting crab broth carries a deep and rich flavor with a light and smooth mouthful. Lemon and sour cream are added for a play of flavors. Perhaps a tinge of tanginess from those. As though the umami is not enough, the addition of the crab & tomato paste raises the crab umami for much complete experience. Apart from those, there is also arugula, onion, and low-temperature char siew with al dente ramen noodles. This does not come with onsen egg so I ordered 1 for myself.
