Celebrate the Festive Season with YUN NANS’s Exquisite Chinese New Year Set Menus, Featuring Specialities Prepared with Premium Ingredients Imported from Yunnan

 The Yun Nans Prosperity Treasure Pot is a new version using upgraded ingredients

Usher in the Year of the Ox this February with YUN NANS! Hailing from and known in China as 云海肴 (pronounced as “Yunhaiyao”), YUN NANS is the largest Yunnan F&B chain in the world. The restaurant will be doling out six Chinese New Year set menus catering from 4 to 8 pax (S$298++ to S$838++), and they will be available from 1 February to 28 February 2021. 


The menu mainstays will collectively feature premium ingredients imported from the Yunnan province. The wild morel used for the YUN NANS Prosperity Treasure Hot Pot touted as the king of edible mushrooms, is a delicacy, costing more than S$800 per kg. Other highlights imported from Yunnan include specially preserved chillis, black truffles, wild porcini mushrooms, and garlic. All of these ingredients lend a complex depth of flavor to the dishes. 

Some of the marquee mainstays include: 

YUN NANS Prosperity Treasure Hot Pot 火焰聚宝盆菜 (Regular for 4-6pax: S$288++, Large: S$438++): The wildly popular dish is making a comeback and is now updated with even more premium ingredients! The golden broth for the hot pot is made with a medley of high-grade ingredients: Jinhua ham, old hens, chicken feet, pork bones, lean pork, pork trotters, dried scallops, and carrots. The soup is brewed for six hours, and during this time all the natural essences and goodness of the ingredients are extracted. Ingredients for the hot pot include wild morel, wild golden fungus, sea cucumber, abalone, scallops, prawns, mushrooms, fish maw, and Chong Cao Hua (cordyceps flowers). The base is laid with yam and Chinese cabbage.  


“Bi Feng Tang" Style Pork Ribs with Truffles松露避风塘焗大排 (S$33.80++): This dish is prepared Cantonese style. The pork ribs are marinated with Yunnan’s special preserved chillis, which pack a spicy punch. A copious amount of Yunnan garlic is deep-fried until golden brown before the pork ribs are added to the wok. Finally, slices of black truffle from Yunnan are added for a fragrant and umami lift.

Braised Lobster and Crabmeat with Beancurd in Seafood青龙蟹肉海鲜汤烩豆腐 (S$88++): A showstopper of a dish, a whole lobster and chunks of fresh crab meat are immersed in a moreish concentrated lobster broth made with pork bones, prawns, dried scallops and ham. Wobbly and delicate, the Japanese silken tofu is braised with ingredients such as lobster meat and caviar. 

Braised Truffle Ee-fu Noodles 松露菌菇煨伊付面 (S$16.80++): Every inch of the noodles soaks up the superior stock, which is made with Yunnan ham and old hen. Accompanying the noodles is a special in-house chili sauce! The recipe for this dish also calls for fresh black truffle from Yunnan.

Steamed Glutinous Rice wrapped with Lotus Leaf荷叶糯米包饭 (S$22.80++): The star of this dish is the wild porcini mushrooms, which contribute an earthy savouriness and fragrance. Fatty pork, mushrooms, dried shrimps, shallots, and garlic are fried, then arrayed on premium glutinous rice. The rice is then wrapped with lotus leaf, which imparts a final sweet and floral note. 

Traditional Salt Baked Chicken古法盐焗鸡 (Half: S$22.80++, Whole: $38.80++): The kampung chicken is cooked using the Hainanese method. Two types of ginger — sand ginger and galangal — are fried alongside pandan leaf and Yunnan lemongrass in chicken oil until their fragrance is released. Then, the ingredients are added to the braising sauce, which is made with turmeric powder and yellow gardenia. The chicken is first braised for an hour, then baked for another hour. The meat is superbly tender and juicy, with the braising sauce penetrating every inch of it. 

Double Boiled Peach Gum and Snow Fungus 安南子炖桃胶雪莲子 (S$6.80++): This refreshing palate cleanser is made with peng da hai (also known as an nan zi), peach gum, snow fungus, and snow lotus seeds. Not only is it delicious, but it is also great for nourishing the skin. 

Toss to a great year ahead
YUN NANS will also unveil the Prosperity Abalone Yu Sheng (S$58.80, 6 pax; S$78.80, 10 pax), a must-have dish for every Chinese New Year feast. Its rendition comes with whole abalones. The yu sheng will be available from 1 February 2021 to 26 February 2021 at both Jewel and Westgate outlets. Collection of the yu sheng on the eve of Chinese New Year will be from 11am to 3pm.
