The Capitol Kempinski Hotel Singapore Unveils “Botanical” inspired Afternoon Tea

Afternoon tea just got more picturesque at The Capitol Kempinski Hotel with the premiere of its latest mid-afternoon treat concept that borrows botanical inspiration from nature. Available for dine-in at the hotel’s Lobby Lounge or as a takeaway/delivery option via the hotel’s Online Shop, take a delectable trip through nature’s enchanting flavors with each course comprising of newly-crafted treats like open-faced avocado sourdough sandwiches and forest berry pudding. They will be served on equally breathtaking botanical landscape-inspired, flora-esque sculptures and branches that you can literally pick off. With a side of tea, get ready to make your afternoon a little bit more magical.

An Epicurean Trip Into Nature  

Across five courses, feed your sense of wonder with treats that serve the magic and allure of nature in one seating. 


The first course brings a Foie Gras Rocher, dressed with candied fruits, Valrhona chocolate, and tree nuts, a Jamon Iberico De Bellota sweetened with compressed cantaloupe, wild rocket leaves, and Taggiasca humid soil, and a Smoked Duck Rice Paper Roll complete with crystalline ice plant and raspberry vinaigrette. There’s also a Fjord Trout Gravlax paired with pistachio cream cheese, keta roe, rice crackers, and fine herbs. This course is perfectly complemented with a serving of the elegant flavors of Jewel of Anxi Tie Guan Yin with Red Dates, Wolfberries, and Dried Longan tea.


The second course brings bolder flavors but in equally dainty portions. The Roasted Black Angus Beef Sandwich is layered with perilla kimchi for punch and a gochujang emulsion for an Asian twist. The greens come in the form of a Smashed Avocado Sourdough topped with bocconcini, sundried tomatoes, and balsamic pearls for a touch of acidity. There is also Beechwood Smoked Chicken quiche, given an Asian take with Japanese fruit curry and cheddar cheese, Chilled Chawanmushi made with spicy century egg emulsion for punch, topped with tobiko and pickled ginger root as well as an Andraschko Coffee Scone, served with dulce de leche, strawberry compote and floral honey yogurt. For tea pairing, a serving of soothing Exquisite Earl Grey tea complements this savory course.

The third course cleanses the palate with a Frozen Kyuri Cucumber Yuzu Lemonade sorbet, made with sparkling wine for a little something extra.

The fourth course is a richly indulgent Forest Berries & Plum Pudding, sticky, thick, and treacly, just as the best puddings should be. For extra complexity, it is Flambéed with our signature Plantation 1840 rum.

The final dessert course unveils a spread of sweets created in the image of the forest’s sweetest. Pandan Emerald Tart entices with coconut Chantilly and green moss topping while Lemon Bergamot Cake blooms with ample marigold flowers sitting atop. Ivory Mousse Pebbles tempt the lips with cassis cremeux while the Financier with griottines and dusted with cocoa sand. End with sweet, creamy Profiteroles, filled with raspberry cream for a fruity blast of freshness. A cup of Imperial Yunnan Pu Er with French Rose caps the experience on a fantastic floral note.
