All month long, there will also be special workshops on Flor de Cana Rum together with appreciation sessions with a representative specially flown in from Monte Cristo Hotel Paris. White Asparagus Special at 15 Stamford by Alvin Leung
From 1-31 May 2022, white asparagus arrives in all its splendor at 15 Stamford by Alvin Leung, in an ala carte menu featuring the Royal Vegetable prepared in a myriad of ways. Taking things up a notch is a recommended wine pairing curated by 15 Stamford’s sommelier. Guests may select their own white asparagus for the chef’s preparation and be treated to a tasting session before settling on their dish of choice.
Begin with appetizers like Torched Tuna Tartare ($35++), dressed with asparagus ribbon, citrus gel, tomatoes, and Oscietra caviar. The soup harnesses the best earthy sweetness of asparagus with White Asparagus Emulsion ($28++), fragranced with smoked garlic, summer black truffle, milk, ocean trout, and a dash of celery oil. The main brings a Hay Smoked Toothfish ($42++) served with poached white asparagus, wild mushroom soil, La Ratte potato, and mullet roe. For a true appreciation of the flavors of white asparagus, the Grilled White Asparagus ($24++) fires up the sweet sticks and serves it with black fungus, fermented chili goat cheese, and Nastartium leaf.

From 18-19 May 2022, catch Beverage Director of the renowned 1802 Bar in Paris Adrian Nino in a one-weekend-only guest stint at The Bar at 15 Stamford. He will be leading a masterclass for the industry highlighting the practice of sustainability as well as hosting guest shifts together with Joe Ngui from Jigger and Pony (Malaysia) and Chris Saw from 28 Hong Kong Street (Singapore).
On 18 May 2022, catch Nino’s guest shift from 7pm -11pm where he will be creating two signature drinks. On 19 May 2022, have a taste of Nino’s bestselling cocktails back in Paris alongside a pairing of bites from Park Bench Deli that has concocted some specialty Nicaraguan dishes for the evening.
German White Asparagus Spargelfest at Frieda Restaurant
From 1 May – 30 June 2022, white asparagus also steals the spotlight at Frieda Restaurant at Arcade @ The Capitol Kempinski in a full-blown Spargelfest celebration. True to the restaurant’s German heritage, it is German white asparagus that is on offer, presented in five different dishes in the height of the Spargelfest Festival. Between dancing and spargel peeling contests, dig into these dishes that range from appetizers to dessert.
The White Asparagus Asian Twist serves the asparagus as a salad, tossed in with bread for bite, sesame vinaigrette for a touch of tartness, and smoked salmon for savouriness. The Asparagus Black Forest Ham bakes white asparagus with slices of smoked air-dried ham to infuse it with a prized brine, before slathering it with Hollandaise sauce and a spritz of lemon juice to cut through the fattiness. Something heartier presents itself with the Asparagus Soup, a light soup made of creamed asparagus, lengthened in the tail with Chervil oil and added crunch with croutons. Not to be missed is the Gratinated White Asparagus which cooks the asparagus in tender gratin style with ham, cheese, and black truffle. For a true taste of the vegetable opt for the Classic German Asparagus Feast – choose between asparagus portions for one or two pax at 250g or 500g, before they are poached and served with simple mashed potatoes and Hollandaise sauce.
‘Frutti del Mare’ Adriatic Seafood at La Scala Ristorante
From 1 May – 30 June 2022, La Scala Ristorante brings the freshest and most prized catch from the Adriatic, the Northernmost arm of the Mediterranean Sea in a special seafood menu made for sharing between 2 persons. Taste the sweetest of the Adriatic across three courses in the Adriatic Platter ($168++), serving up a carpaccio salad, grilled platter, and a stew.
The Scallops Carpaccio riddles a classic Mesclun and cherry tomatoes salad with thick slices of scallops carpaccio, marinated with Tiger’s milk for a good punch. The Seafood Platter brings grilled crayfish, jumbo prawns, octopus, deep-fried calamari, seabass, and more prawns, served with dipping options inclusive of garlic aioli, arrabiata sauce, and lemon slices for freshly squeezed juice. The Zuppa di Cozze will warm hearts and stomachs everywhere with a rich tomato broth, sweetened with mussels slow-cooked within, elevated with white wine, garlic, onion, parsley, bay leaves, and creamy polenta.
