Aburi Hokkaido-Wagyu Ramen ($24.90) |
Known for its jaw-dropping presentation of its ramen offerings, Menbaka Fire Ramen is set to unveil its spring menu. Five delicious mainstays will whisk you away to the Land of the Rising Sun! The menu will be available from Wednesday, 6th April.
For the Aburi Hokkaido-Wagyu Ramen ($24.90) - (Taster Portion available at $22.90), 100-degree water is cascaded over katsuobushi (bonito flakes) to make the dashi water. Hondashi, sashimi shoyu, and mirin are then concocted into the dashi water to make the katsuobushi broth. Ramen noodles are cooked in the broth, and the ribbons soak up the umami goodness. Choice of Aburi Japanese Hokkaido-wagyu or Aburi New Zealand organic Striploin rounds out the line-up — as the melted Wagyu fats and essence absorb into the broth, they contribute further depth to the flavor profile. Wagyu fat cubes perching atop the beef slices impart another savory punch. The overall dish is then topped with ito togarashi (chili shreds) for a touch of kick and freshly cut Negi for fragrance & crunchiness.

A dry offering, the Truffle Mazesomen ($10.90) - (Taster Portion available at $6.90) is served with tobiko, dry salted seaweed, Sakura ebi, and Negi. The somen teuchifu is drizzled with a generous amount of a white truffle oil secret mix. The secret mix is a perfected harmony of white truffle oil and shoyu packs an irresistible aroma and umami note.
Level Up the indulgence with the unique Ebi Tempura Organic Striploin Roll ($6.90). The tempura Ebi is deep-fried to golden perfection then enveloped with Aburi Organic Striploin drizzled with Goma sauce (sesame sauce) and sprinkled with specially selected furikake for extra crunchiness.

Pair off with the Sakura Milk Latte ($6.90), that’s full of cherry blossom fragrance. The smoothly frothed milk is infused with organic hibiscus, rosehip, and beetroot. A pinch of chai and beetroot also enlivens the beverage’s natural color. Cap off the session with the Sakura Yoghurt Pudding ($6.90). The fresh and natural low-fat yogurt pudding is topped with real preserved Sakura flowers from Japan — this Instagram-worthy dessert boasts a gorgeous river flow effect.

The history of Menbaka Fire Ramen
Opened in Kyoto in 1984 by ramen master Masamichi Miyazawa, Menbaka Fire Ramen is widely known and beloved in Japan for its dramatic preparation methods and for its snaking queues. Menbaka’s signature Fire Ramen is not just about showing off: An expert control of the oil and fire is required to achieve the perfect fragrance of the broth.
For several years, Master Miyazawa experimented with several methods to catch people’s attention before finally coming up with the idea to create his signature fire ramen; and he instantly found success. As the decades went by, the famous brand found it hard to compete with new entrants and the sweeping wave of social media, and Menbaka Fire Ramen teetered on the verge of closing.
It was then that Master Miyazawa’s son, Shin Miyazawa, entered the business. Shin brought with him a youthful energy and social media know-how. He taught himself how to speak English and gradually won the adoration of foreign tourists as well as the renewed interest of ramen fans from all around the world. It begins a new chapter with the opening of its first-ever overseas outlet with the Singapore branch of Menbaka Fire Ramen.
