Mother’s Day Set Menu
YUN NANS’ Mother’s Day Set Menu comprises six dishes, each carefully curated for meaningful meals at home.
Headlining it is the Steam Pot Chicken Soup with Lily Bulb 百合汽锅鸡, a nourishing soup that first made its debut on the Mother’s Day menu last year. Cooked without a single drop of water, it draws immense sweetness and nutrition from a special breed of black feet chicken and lily bulbs imported from Yunnan. Chicken and flowers are pressure steamed for no less than three hours, resulting in a crystal clear soup extract that blooms with the delicate fragrance of lily bulb petals. Each sip nourishes the lungs and calms the soul to promote restful sleep.
New on the menu is the Bursting Tofu with Salt & Pepper 椒盐爆浆豆腐, a highly addictive dish created for the occasion. A quintessentially Yunnan dish originating from Shiping County, it is a simple dish that ranks high on flavor. The tofu is handmade using spring water, deep-fried to a crispy brown outer skin, and pillowy soft insides. Dipped into a blend of salt and pepper, it is fragrant and enticing, impossible to stop at just one piece.
A crowd favorite is the Lychee Prawn Ball 荔枝虾球, a sweet refreshing take on prawns. Fresh prawns are hand-beaten to a silky paste before being shaped into bite-sized balls that mimic the lychee fruit and deep-fried with crispy bits for a crunchy exterior, reminiscent of lychees. Inside, it retains a juicy tenderness bursting with the sweetness of prawns for a treat that is crunchy and chewy, sweet and savory, all at once.
The Braised Chicken Noodles with Dried Chilli 黄焖鸡焖米粉 is a treat for all, bringing braised noodles in a comforting chicken broth, with a slight punch of dried chilies for that spicy kick.
Adding to the flavors is the Grilled Seabass with Lemongrass 傣味香茅草烤鲈鱼, marinated in six types of spices for a flavor that goes to the bone before being grilled over charcoal and sprinkled generously with more fragrant spices before serving.
Rounding things up is the Poached Seafood Rice in Prawn Broth 海鲜虾汤泡饭, a soothing dish for the tastebuds and stomach with rice poached in YUN NANS’ signature prawn broth. The result is a dish bursting with the sweetness of fresh seafood including clams and prawns. Rice pops lend some crunch for a play on taste and texture.
