Age-old Traditional Hainanese Recipe

Wrapped in tradition, The Hainan Story’s Hainanese Grandma Rice Dumpling海南老妈粽子is prepared with an age-old recipe passed down from a Hainanese grandmother. Aptly named Hainanese Grandma Rice Dumpling, this dish brings back memories of one’s grandma and her mouth-watering, home-cooked food. 

Every glutinous rice dumpling here spotlights a key Hainanese ingredient – the braised pork belly. Soft and tender, this pork belly is a result of hours of braising over low heat in the fragrant flavors of soy sauce. A generous chunk of this sweet and savory fatty braised pork belly, as large as the ones you would find in a kong bak bao (Chinese braised pork belly bun), can be found in every dumpling, offering a satisfying mouthfeel with every bite.

While you will find the usual suspects of chestnuts, peanuts, mushrooms, and salted egg yolks in the dumplings, a lot of care goes into preparing each ingredient. The glutinous rice is stir-fried with black pepper, dark soy sauce, and five-spice powder for a robust fragrant flavor. 

Chestnuts are pre-soaked and cooked till soft. Salted egg yolks are specially curated to be deep orange in color, buttery and creamy. 

An unlikely addition here is the cuttlefish which is lightly fried with dried shrimps and shallots, delivering a surprising crunch to the dumpling. Each dumpling weighs 330grams and is recommended to be taken with palm sugar syrup or The Hainan Story special Sambal Chilli.
