A Taste of Summer with Sushi Tei — Umezu-fed Shima-aji, Tochigi Wagyu and Kannonike Pork Headline Seasonal Menu

Summer is upon us! Celebrate this sunny and beautiful season with Sushi Tei. Enjoy a Taste of Summer with the restaurant’s seasonal menu, which showcases premium ingredients such as Kishū Plum Shima-aji, Tochigi Wagyu, and Kannonike Pork.


Unique fish that is fed with umezu extract

Kishū Plum Shima-aji Set ($24.80)

Not to be missed is the Kishū Plum Shima-aji, which has good-quality fat, a chewy texture, and a subtle sweetness. Its remarkable taste is owed to its special diet containing umezu extract. The extract comes from Kishū Ume Shima-aji, which is cultivated in Wakayama Prefecture, Japan’s most famous plum producer. The fish is prepared in three different ways in the Kishū Plum Shima-aji Set ($24.80): sushi, sashimi, and maki. Or go with the exquisite Sashimi Moriawase “Wakayama” ($32.80, M), which comes with thick slices of the fish, salmon, tuna, and juicy salmon roe, all served on ice. 


Rare beef from Tochigi Prefecture with excellent marbling 

Tochigi A4 Tochigi Wagyu Don ($29.80)

Another highlight is the Tochigi Wagyu, whose marbling is gorgeous. Only premium-grade beef from the Japanese black cows raised by the 200 designated producers in Tochigi Prefecture can earn the name of Tochigi Wagyu. The cows feed on a staple of Tochigi rice, which improves the flavor and aroma of their meat, as well as rice straw. This beef takes centre stage in the A4 Tochigi Wagyu Don ($29.80). The striploin is pan-seared to a golden-brown crust and then drizzled with a sweet honey garlic steak sauce. Ikura, garlic chips, and tempura bits accompany the beef. 


Juicy, tender pork with great flavor

Kannonike Pork Shabu Shabu ($18.80)

The Kannonike Pork is a crossbreed of three different species. The pigs grow up in the beautiful, stress-free farms of Miyakonojo City, Miyazaki Prefecture. The fat in each slab of meat imparts incredible flavor and juiciness. Relish the melt-in-the-mouth texture of the pork with the Kannonike Pork Shabu Shabu ($18.80). Immerse the sliced pork belly into the dashi soup base to soak up the delicate soup. The individual hotpot also comes with enoki, tofu, shiitake mushroom, carrot, and shirataki noodles.  


Catering to all taste buds

  

Natsu Enoki Tempura Roll ($11.80)

Chasyu Yuzu Hiyashi Chuka ($14.80)

The summer menu also offers a wide variety of Japanese mainstays. The Natsu Enoki Tempura Roll ($11.80) features blocks of deep-fried golden mushroom sushi roll, each layered with cooked prawn and avocado. A delightful honey yuzu sauce imbues the roll with a sweet tang.

Cool off with the Chasyu Yuzu Hiyashi Chuka ($14.80), a perfect summer dish. The refreshing ribbons of cold noodles are topped with roast pork and a special yuzu sauce. Cap off the meal with the invigorating Suika Sherbet ($7.80), which resembles a real watermelon. The flesh is made with watermelon juice, and the seeds are made with jelly.
