15 Stamford by Alvin Leung brings Asian appetizers

If you love the Asian reverence of the food at 15 Stamford by Alvin Leung, get ready to fall in love even more with a new platter of Asian appetizers, Singapore-style, to really ring home the spirit of nationalism at your next dinner. The Asian Appetiser Platter comes with flavors all Singaporeans will be familiar with growing up. Begin with Classic Braised Cold Quail Egg for savory pops of marinated eggs finished off with chive and shallot oil and Nyonya Pickled Cucumber & Shrimp emboldened with a sprinkling of sesame seeds and brightened further with calamansi. Quintessentially Singapore flavors with the Singapore Chilli King Crab, cooked to juicy sweetness with lashings of sweet and sour chili gravy and additions of iceberg lettuce and scallion, as well as the Satay Kueh Pie Tee that fills the traditional little cup crackers with chicken, peanut sauce and pineapple purée for a modern take. Completing the platter are Fried Fritters served with kaya and chicken floss as well as Century Eggs, delicately garnished with ginger salsa and Beluga caviar.

Lobby Lounge pours a National Day Tea of Straits Chinese delights

Lobby Lounge’s idyllic afternoon tea looks to local flavors this National Day with a 5-course afternoon tea with your choice of free-flow tea, Ruinart Brut champagne, or sparkling wine. Savories entice with items like Drunken Chicken and Chilled Chilli King Crab angel hair pasta alongside Smoked King Salmon on rice crackers as well as jamón ibérico de bellota served in compressed cantaloupe and finishing of olive powder. It continues on the same note with Otak Otak, Vegetable Curry Quiche, Smashed Avocado Sourdough before tailing off with lighter flavors like Chilled Chawanmushi and Pandan Scone, served with house-made kaya and whipped butter condensed milk. A Frozen Yuzu Teh O Ping with Sparkling Wine awaits as a palate cleanser before things move on to the Plum & Berries Pudding, made with the hotel’s in-house Plantation 1840 Rum. Dessert rounds things off with Kopi O Financier, Bandung Pebble, Bubur Cha Cha Pudding, Mini Ang Ku Kueh, and Pandan Emeralds. 

The Straits Chinese Afternoon Tea is available from 3-10 August 2022 between 2.30pm and 5.00pm. On 6-9 August 2022, two seatings are available from 12pm-2.30pm and 3-5.30pm. It is priced at $58++ with tea pairing, $98++ with free-flow Ruinart Brut champagne, and $42++ with free-flow sparkling wine. 

The Online Boutique presents an Ondeh-Ondeh Tart and Cocktail Bundles

Little else reminds Singaporeans of home like ondeh-ondeh, which is transformed into a tart for National Day. Place your order online for the Ondeh-Ondeh Tart (9-inch) and sweeten your after-meal hours with delectable pandan curd on a fragrant compressed pate sable. Mochi adds a chewiness to each bite while Gula Melaka shavings lend that caramelized fragrance, topped off with toasted coconut flakes and coconut chantilly.

Those seeking to toast to Singapore can do so with the National Day bundle of three cocktails consisting of the hotel’s signature cocktails. Sip on the refreshingly fruity Singapore Sling, warm up on the bolder and punchier Plantation 1840 and then take a walk down memory lane with Remember the Balestiers, all deliverables right to your doorstep.

Frieda German Restaurant’s locally-inspired fare

Frieda German Restaurant proves that German food can take to Singaporean flavors well with the use of local ingredients in typically German dishes. The Jumbo Prawns Cincalok Shrimp Rosti ($39++) layers the typical German potato rosti with cincalok fermented shrimp for an umaminess that will turn the rosti around. Likewise, the signature Roasted Half Pork Knuckle & Sausage ($57++) gets local sauerkraut to ring things home to Singapore, served with a side of plum sauce for a stray from the ordinary.

La Scala Ristorante’s spicy local renditions

Italian food gets a local spicy spin at La Scala Ristorante with seasonal items that will remind everyone of home. The Spaghetti Chicken Rendang ($29++) swaps out the typical beef bolognese sauce for chicken rendang, made extra creamy with yogurt and upped in spice factor with red chilies and a sprinkling of fried shallots. There’s also the Spicy Grigilata Gamberi ($45++) that challenges the most discerning spice lover with King prawns stir-fried in a medley of chilies, red onion, and curry leaves.

Berthold Delikatessen’s local sweets and treats

Takeaway treats perfect to go with coffee also come with local inspirations at Berthold Delikatessen, which offers a mini version of the Ondeh-Ondeh Tart (3-inch, $8.50+), consisting of the same delectable pandan curd on a fragrant compressed Pâte Sablée. Mochi adds a chewiness to each bite while Gula Melaka shavings lend that caramelized fragrance, topped off with toasted coconut flakes and coconut chantilly. For coffee to pair with the tart, the Cold Dalgona Gula Melaka Kopi ($7.60+) has a strong espresso shot sweetened with concentrated Gula Melaka syrup and then whipped to a silky tall beverage with milk before powdered off with cocoa powder.
