VUE celebrates National Day with five courses of local indulgence, available for one night only on 9 August 2022

As Singapore gears up to celebrate 57 years of illustrious independence, so does VUE with an exclusive one-night-only five-course dinner menu of local indulgence. The menu, available only on the evening of 9 August 2022, will feature iconic local flavors that every Singaporean will be familiar with, like ‘Bak Kut Teh’ Pork Terrine and Kaya Toast Mille-Feuille. 



Sit down and dig into Chef Sam Chin’s iteration of Singaporean cuisinal pride at its finest, savored against sweeping views of the iconic Marina Bay as a toast to 57 years of independence. 

Begin with Poached Speciale Geay No 2 Oysters, the fleshy bodies of the prized shellfish given a local twist with chili, watermelon puree, sago, and trout roe. 

‘Bak Kut Teh’ Pork Terrine

The tale of local flavors continues with ‘Bak Kut Teh’ Pork Terrine, which fattiness is cut through with whole grain mustard chutney and brightened with a dash of pickled chili atop a crispy rice cracker. A fresher alternative is the Seared Hokkaido Scallop, spiced with fruity longa, julienned cucumber, and a spicy and sour laksa emulsion. 


Grilled Maine Lobster

Things warm up with Pan-Seared Foie Gras, lifted in taste and texture with a variety of sweet and sour mango and grounded with fried capers. The other option is the Grilled Maine Lobster, served with fragrant prawn crackling, homemade fish, and squid noodles and served with an XO chili sauce for a punch of local spice.

Mains like the Dover Sole a la Plancha borrow Asian influences with pancetta, Hong Kong kai lan, and preserved daikon sauce. Similarly, the option of Slow-Roasted Australian Wagyu Beef Short Ribs gets an Asian dress up with broccolini with fried garlic and a smoky kung pao sauce. 

End things on a sweet note with the modern take on the Kaya Toast, recreated as a wispy mille-feulle, layered with rich kaya and Ying yang ice cream for a contrast of cloud-like mousse versus flaky puff pastry, cold ice cream versus warm kaya. 


Special 5 Course Prix Fixe: $288++

Dinner commences from 5.30pm onwards, available in one seating only.

Access to the VUE Bar Area is subjected to a minimum spend of $150++ per guest.
