This Christmas, Châteraisé, the no.1 patisserie from Japan, is pulling all the stops in making its best cakes and bakes for the season. Châteraisé New Flavours for the Season

 

Xmas Premier Rouge (15cm, $52) 

Get well into the Christmas mood with a ruby red Xmas Premier Rouge (15cm, $52) made with a decadent centre of bright strawberry, raspberry, and cassis jelly, sandwiched with a layer of sponge before it is enriched with cream cheese mousse. It all sits on a bed of feuilletine chocolate and a base of dacquoise before it is glazed to shiny perfection with red glacage and topped off with fresh strawberries and blueberries. 

A Christmas with a touch of Japanese influences presents itself with the Xmas Japanese Specialty (11cm, $45) that hides a centre of houjicha cream and matcha cream riddled with sugared Hokkaido red beans on a bed of sponge made from wasanbon, a high-quality fine-grained Japanese sugar, and premium rice flour. Delicate fresh cream ices the entire cake, which is then topped off with yellow chestnuts nestled in fresh cream above swirls of matcha cream.  

 

Xmas Japanese Specialty, Xmas Mango Dream

A fruity delight can be found with the Xmas Mango Dream (14cm, $45) of mango cream, fresh mangoes and mango jelly layered on a bed of sponges to present the ultimate mango treat. Fresh cubes of mango and strawberries complete the full mango cake.

Best sellers such as Buche de Noel (20cm, $48), Noel Blanc (20cm, $48), and Xmas Crispy Chocolate Cake (17cm, $50) will return as well.

A commitment to using fresh, high-quality ingredients  

Buoyed by its network of over 100 contracted farms, Châteraisé can procure fresh, natural ingredients to make its beloved cakes and sweets. The milk it uses comes from grass-fed cattle that live at a ranch in the Yatsugatake foothills. Feeding the cattle grass ensures that they produce milk that is very rich in flavor. At the factory, the milk is pasteurized for 30 minutes at a low temperature of 65 degrees Celsius — this process ensures that the milk retains its natural composition, flavors, and nutrients.

Châteraisé is self-sufficient in the production of eggs in Yamanashi. The eggs that we use are free from additives. The chickens are given a diet comprising healthy animal feed, which helps ensure that their eggs are low in odor. The eggs are then broken using special machinery at the factories. Local farmers also deliver fresh, sweet, and delicious strawberries directly from the production area to Châteraisé. With over 991 million strawberries harvested each year, Châteraisé is very particular about the quality of their strawberries and gets them from contracted farmers all over Japan. 

The brand uses the natural spring waters of Hakushu to wash and cook its adzuki beans from Hokkaido. It is this insistence on using premium-grade ingredients that have enabled Châteraisé to become the number 1 confectionery manufacturer in Japan, with a yearly turnover of USD700 million.
