Winter marks the start of crab season in Japan. Snow crabs (Zuwaigani) are loved for their tender, snowy white meat with sweet and savory umami flavor. Smaller but no less delicious are Hokkaido hairy crabs (Kegani) which are famous for their firm meat and exceptional sweetness.
At the Winter Fair, Kuriya Japanese Market is bringing in Hokkaido hairy crab ($55/pc) which can be enjoyed cold or warm. Simply thaw (from the frozen condition) or steam them to enjoy them. Its creamy roe packs a rich umami punch and is best enjoyed with a zesty ponzu sauce.
