Jok is a type of rice porridge that is popular in Thai cuisine. It is made by simmering rice in water until it breaks down and becomes a creamy, smooth consistency. The resulting porridge is often served with a variety of savory toppings and seasonings, such as sliced ginger, green onions, soy sauce, and/or fish sauce, which add depth of flavor and nutrition to the dish.
In Thailand, jok is often consumed for breakfast or as a light meal and is considered a comfort food. It is also sometimes served at street stalls or small local restaurants and is often accompanied by side dishes such as pickled vegetables, fried dough sticks, and/or fresh herbs.
Continuing with trying different kinds of Thai food, I found Mallika Rice Porridge which is near Phahon Yothin station. This was before we made our way to Chatuchak weekend market. They have been around the area for more than 30 years and started out from a small cart into a physical shop now.

The toppings here are ginger and spring onions. The ginger adds a add a warming, comforting taste while the spring onions are often used as a topping for porridge and add a crunchy texture and fresh, savory flavor to the dish. You can add other seasonings such as fish sauce and soy sauce depending on personal preference.
