REVIEW: Good Japanese Soba Restaurant in Singapore: Tokyo Soba

Another Hidden Gem 💎 I discovered at Tanjong Pagar, Tokyo Soba used to be located in a hole in a wall small shop but has since expanded and taken over 2 units across them.

I ordered the dipping style cold soba with onsen egg and braised beef. They serve fresh handmade soba every day. The cold soba noodles themselves have a slightly nutty flavor and a firm texture. Dipping cold soba noodles in the savory and slightly sweet broth is an explosion of flavors in your mouth. The broth is made with soy sauce, mirin, and dashi, giving it a rich umami flavor that's perfectly balanced. When I dip the soba noodles in the broth, they soak up all that deliciousness, making each bite a burst of flavor. 




But what really takes this dish to the next level is the braised beef. It's cooked to perfection, tender and juicy, and packs a flavorful punch that perfectly complements the savory broth. 


I also ordered an onsen egg.  As I dip the noodles into the broth, the yolk from the egg mixes in, creating a creamy and indulgent sauce that takes the dish to a whole new level. The poached egg adds a whole new dimension of flavor and texture to the dish. The creamy yolk is the perfect complement to the savory broth, and the slightly runny texture is the perfect contrast to the chewy noodles. It's like adding a luxurious blanket of flavor to an already delicious dish.
