Discover the Delight of "Mee Tai Mak": A Popular Noodle Dish in Singapore and Malaysia

"Mee Tai Mak," a beloved noodle delicacy widely savored in both Singapore and Malaysia, has captured the hearts of locals and visitors alike. These unique noodles are renowned for their short, spherical shape, resembling luscious grains of rice or glistening pearls, hence earning them the affectionate alias "Lao Shu Fen" or "老鼠粉," which adds a touch of charm to the name. It is believed that the moniker was inspired by the noodle's tapered form, akin to that of a mouse tail.

The versatility of Mee Tai Mak knows no bounds, as it features prominently in a diverse array of cuisines, from hearty soups to tantalizing stir-fry dishes. The noodles boast a pleasant chewy texture and an impressive ability to absorb flavors, making them the ideal choice for noodle-based dishes accompanied by sumptuous sauces or savory broths.

Indulging in Mee Tai Mak is an experience to cherish, and fortunately, it can be found in abundance at Singapore's vibrant hawker centers, bustling food courts, and cozy local restaurants. Catering to diverse palates, these culinary havens serve an enticing array of savory and comforting Mee Tai Mak dishes, ensuring that there is something for everyone to relish.

1) Shu Heng Bi Tai Mak 數興老鼠粉

Shu Heng Bi Tai Mak is a hawker stall at Kebun Bahru Market and Hawker Centre that specializes in Bee Tai Mak. I went with the best-selling Mushroom Minced Pork Noodles. It includes fish balls, fishcake, minced pork, and braised mushrooms. I was astonished at how much mushroom minced pork I received, and it was so delicious. The bee tai mak was already well-tossed in the sauce making every mouthful slurp-worthy.

2) Ipoh Tuck Kee Son 怡保德记仔炒粉

Apart from the famous Moonlight hor fun from Ipoh Tuck Kee Son 怡保德记仔炒粉, this plate of fried mee tai mak was so good too coz it was fried with the same gravy as hor fun. It is very well combined with the gravy with each mee tai mak coated in that delectable brown gravy.

3)
Hui Ming Fishball Noodle 惠民鱼圆香菇面

The mee tai mak from Hui Ming Fishball Noodle was so good and the savory dark sauce that coated the mee tai mak was so good. The dark sauce adds depth and richness to the dish, enhancing its overall taste. It imparts a satisfying umami undertone that perfectly complements the chewy texture of the noodles. one of my favs in Toa Payoh.

4) 136 Hong Kong Street Fish Head Steamboat

This shop used to be at Toa Payoh but they have moved to Potong Pasir.. and I have not been there ever since so here I am!! I used to eat this very often last time.
The claypot bee tak mak was well-cooked in this thick umami gravy with raw egg, prawns, minced meat, and vegetables. It's just very palatable and not too salty. The clay pot bee tak mak was served hot with bubbling gravy. Nothing is more comforting than tucking into a whole clay pot of hot bee tai mak on a cold, rainy day. On days when you just don't feel like cooking but want a comforting meal, this is one of the food choices you can turn to.

Address: Joo Seng Food Place, 1 Upper Aljunied Ln, Singapore 360001

5) Macpherson Minced Meat Noodles

Having the xiao wan mian at Macpherson Minced Meat Noodles! We had the mee tai mak and mee pok. The mee pok noodles are served to al dente perfection, soaked in a concoction of sauces such as vinegar and braised mushroom sauces. These noodles are luxuriously bathed in a harmonious blend of flavorful sauces, including vinegar and braised mushroom sauces. The vinegary sauce introduces a sharp and tangy element that perfectly balances the noodles' richness. Immerse yourself in the cloudy broth, brimming with delectable ingredients such as minced pork, sliced pork, pork liver, fish cake, fish dumpling, and even a raw egg that cooks gently in the simmering broth. I really like the soup. It's thick and full-bodied with sweetness from the pork.

6) Crown Prince Kitchenette

Crown Prince Kitchenette is a hidden gem restaurant located in United Square, Novena, offering authentic Malaysian-style zi char and a wide selection of Chinese dishes.

Claypot Mee Tai Mak is a delightful dish where the soft and chewy noodles perfectly soak up the flavors of the sauce, creating a savory and slightly sweet taste. It features prawns, squid, pork slices, bean sprouts, and vegetables, topped with a raw egg.

7) Ah Hua Teochew Fishball Noodle

We finally made our way to Pandan Gardens to try out Ah Hua Teochew Fishball Noodles
! Our order consisted of their renowned dry-style mee tai mak and dry mee pok. Although the mee tai mak didn't appear overly saucy, it was packed with delightful flavors of sesame oil, lard, and fish sauce. The aroma was simply heavenly! To top it off, they even included a single abalone, adding a touch of elegance to the dish. How fancy!

Due to their commitment to using handmade ingredients, the restaurant had to shorten its operating hours to ensure everything was prepared fresh for the following day. Their soup was served with an assortment of delectable additions, such as fish balls, meatballs, herh kiao, fish cakes, and prawn balls.

Despite visiting on a weekend morning, the coffee shop surprisingly wasn't crowded at all.

Address: 415 Pandan Gardens, #01-117, Singapore 600415

8) Omage Foods

I decided to check out Omage Foods, which began as a home-based business selling spreads like Kaya and has since expanded to a physical stall selling savory dishes. Their menu consists of three main courses and two side dishes. I couldn't resist trying their Signature Mee Tai Mak because I love mee tai mak.

Address: Bedok 85 Market, 85 Bedok North Street 4, #01-69, Singapore 460085
Opening Hours: 7 am - 2 pm, Closed on Wednesday

The Signature Mee Tai Mak ($3.50) reminded me of carrot cake or char kway teow at first sight. This wok-fried dish consists of minced pork, chai pork, century egg, fishcakes, and mushrooms, all mixed with their distinctive homemade Rempah. There is an interesting myriad of textures here from the ingredients. The dish has a beautiful combination of spice and the delectable aroma of wok cooking, which is accentuated by the inclusion of a slightly crushed century egg, which results in a wonderfully creamy texture.
