REVIEW: Good Handmade Pasta & Highball Bar in Singapore: Ameising La Volta at Bencoolen Singapore

We discovered Ameising La Volta while looking for a decent dinner place in the Dhoby Ghaut area. This restaurant serves a unique blend of Asian fusion handmade pasta, as well as a selection of hot and cold tapas. It is conveniently located near the entrance to Lazada One on Bras Basah Road, and it is also quite close to Bencoolen MRT station. Ameising La Volta is the newest addition to the Ameising group, which is known for prominent restaurants such as Ameising Bar & Dining and Ameising Hikaru.

3 Cheese Cacio E Pepe Extreme:

Here's what I chose to enjoy. Impossible to resist the Cacio e Pepe! The combination of the three cheeses indeed resulted in a smooth and luxurious texture for the pasta. However, I personally found that the presence of black pepper was a bit overpowering. It teetered on the edge of being too spicy for my taste.


Italian Carbonara w Parma Ham:

Savor the classic comfort of Italian carbonara elevated by adding exquisite Parma ham. The silky sauce coats the pasta with a luxurious creaminess.


Japanese Clams & Mushroom Sakamushi:

Embarking on a Japanese excursion, this pasta draws inspiration from sakamushi techniques. The dish captures the essence of delicate clams and the earthy notes of mushrooms, which have been skillfully integrated. The outcome presents a balanced fusion of umami tastes, as the inherent sweetness of clams beautifully mingles with the rich savoriness of mushrooms. There's a hint of familiarity akin to aglio olio.


Deconstructed Pesto:

This seems interesting. The deconstructed pesto takes a unique approach by featuring lively basil as a garnish, imparting its invigorating fragrance to the plate. Toasted pine nuts and shredded Parmesan create a delightful textural interplay, while a gentle drizzle of lemon juice harmonizes the lively and herb-infused components. The taste here appeared to lean towards a more delicate profile.
