Hong Soon’s traditional mixed pork noodles are brimming with ingredients that create a hearty and fulfilling experience. Each bowl is packed with tender lean pork slices, rich liver, multi-layered small intestines, and savory minced pork.

While the soup version is enticing, I decided to try the dry version and ordered the combination of kway teow and yellow noodles. The texture of the noodles was perfect, providing a wonderful base for the toppings. It was generously adorned with crispy pork lard that added a satisfying crunch to every bite. To elevate the flavor, a spoonful of their chili was included, giving the dish a delightful spicy kick without overwhelming the palate.

One of the standout features of the dish was the sauce—it struck the perfect balance and wasn’t overly salty, allowing the natural flavors of the pork and noodles to shine. The cloudy, milky appearance of the broth hinted at the long hours spent simmering the pork, resulting in a rich and flavorful base.



The broth itself was a revelation, boasting layers of porky goodness, a deep umami flavor, and a touch of sweetness that perfectly complemented the other ingredients. It’s the kind of broth that warms your soul and leaves you feeling satisfied and content.
