REVIEW: Good KL-style pork noodles in Singapore: New Ocean新海 (KLPork Noodle and Fish Head Noodle) at Toa Payoh

If you're a fan of hearty, flavorful pork noodles, you're in for a treat. Recently, I stumbled upon New Ocean 新海 (KL Pork Noodle and Fish Head Noodle)—a hawker stall offering authentic KL-style pork noodles that's rare to find in Singapore. Located in a bustling hawker center, New Ocean serves both pork noodles and a variety of fish soups, with a strong focus on the latter.

What’s in the Bowl?

The pork noodles here are as satisfying as they come, with a generous mix of pork cuts: tender slices of lean pork, earthy liver, creamy kidney, chewy small intestine, minced pork, and springy pork balls. All of these are served in a rich, deeply flavored broth that truly hits the spot. To top it off, they sprinkle on pork lard and spring onions, which add a nice crunch and freshness to every bite. While the black sauce was slightly thicker and saltier than expected, it balanced well with the savory ingredients.

A Broth with Depth

The highlight for me was definitely the broth. It’s hearty and packed with umami, a true testament to the flavors of KL-style pork noodles. I have a hunch that the same broth is used for their red grouper-sliced fish soup, which also impressed me with its fresh, tender fish slices.
