Ivan's Carbina is a hidden gem in the Woodlands area—a Western food stall dishing out a unique find in Singapore’s hawker scene: Swiss-style rösti and hearty mains.
I stumbled upon this stall on the Burpple app after seeing they offered rösti—something I’ve hardly seen at any hawker or coffee shop apart from Marche.
This kopitiam staple has been around for over a decade, earning a loyal following for its comforting, no-frills fare at budget-friendly prices. The highlight? Their crispy potato rösti, which delivers that perfect contrast between a crackly, golden crust and soft, fluffy insides. You can pair it with a choice of mains like grilled chicken chop or sausages, and they also offer the usual Western fare like pasta, fried chicken cutlets, fries, and more.
While the sauces that come with the dish are a bit on the light side, the rösti itself is excellent. As shown in the pictures, the outer layer is beautifully crisp without being burnt, while the inside stays soft and comforting. Truly delicious!
The Rosti with Chicken Chop and Black Pepper Sauce is a generous and satisfying dish that combines kopitiam charm with bistro-quality flavors. The golden rösti is pan-fried to a crisp, with shredded potatoes creating a delicate, lacy crust outside while remaining buttery and tender inside.
Resting on the rösti is a substantial chicken chop, grilled to achieve a slight char on the edges. The meat stays juicy, and the crispy skin adds a savory crunch. It’s smothered in a rich, thick black pepper sauce, bursting with bold flavors and peppercorn bits that deliver a lingering spicy heat. A dollop of sour cream on the side adds a cool, tangy element, swirling into the rösti to bring creaminess and a touch of indulgence, making each bite flavorful and well-rounded.
