We started off our day with simple breakfast at Spring Labs @ Eco Spring.
This was our first stop of the day. 早尚好 Good morning food truck also located at the same area as
tropique is selling these super instagrammable Taiwanese-style breakfast sandwiches! Don't be mislead by the name of the shop coz.. they have a physical store now although the food truck is still operating. This sandwich toast is excellent for an on-the-go breakfast or midday snack, because the it is more “assembling” than “cooking.”
We ordered the chicken egg toast and kimchi chicken egg toast. The sandwiches are toasted such that both sides are lightly browned. The sandwiches are served wrapped in paper but sliced in halves.
Chicken egg toast:
Toast with lettuce, peanut butter sauce, tomatoes, chicken breast meat and molten egg.
The chicken egg toast was lathered with a thick layer of homemade peanut butter.
kimchi chicken egg toast:
Toast with Kimchi, molten egg and chicken breast meat. The kimchi has a pleasingly crunchy texture that's not too soggy. Kimchi is my fav and this spicy, pungent kimchi is right up my alley!!!
Although aesthetically pleasing, the taste is kind of not there yet. The chicken wasn't tender and the egg needs to be more molten. The idea of kimchi toast was kind of novelty though.
