Easy One-Pot Mushroom Rice Recipe

Ingredients
  • 2 teaspoons butter
  • 6 mushrooms, coarsely chopped
  • 1 clove garlic, minced
  • 1 green onion, finely chopped
  • 2 cups chicken broth
  • 1 cup uncooked white rice
  • salt and pepper to taste
Cooking Directions
  1. Melt butter in a saucepan over medium heat.
  2. Cook mushrooms, garlic and green onion until mushrooms are cooked and browned and liquid has evaporated.
  3. Stir in chicken broth and rice. Season with parsley, salt and pepper. Reduce heat, cover and simmer for 20 minutes.

You will get a creamy, earthy and pack full of flavour rice. I love it and this recipe is so easy to make! You can easily use any kind of mushroom and my choice is oyster mushroom and shiitake Mushroom.
