Sushi Tei Showcases Premium Produce Sake Madai, Maruzen Craft Wagyu and Selecta Chestnut-fed Pork in Its Seasonal Autumn Menu

A season associated with abundance, autumn is the best time to enjoy a bountiful selection of produce at its peak flavors. Sushi Tei’s seasonal autumn menu unveils 20 offerings that celebrate the best flavors of the season. For a limited time only, foodies will get to experience the taste and quality of three premium, top-notch produce – Sake Madai, Maruzen Craft Wagyu, and Selecta Chestnut-fed Pork.

Sake Madai – Bred exclusively for Sushi Tei

Sake Madai Sashimi

The Sake Madai boasts a gorgeous red color, pronounced freshness, and velvety texture. It is bred exclusively for Sushi Tei and cannot be found even in Japan’s renowned fish markets! The fish is the star ingredient in dishes such as Sashimi Moriawase "Nagasaki" and Sanshoku Hana Roll. The Sashimi Moriawase "Nagasaki" 4 Kinds (S$27.80) comes with Sake Madai, salmon, yellowtail, and sweet shrimp. Elegantly presented, the Sanshoku Hana Roll (S$9.80) features a trio of bluefin tuna, Sake Madai, and salmon sushi. They are then spooned with a homemade sauce. Alternatively, enjoy the Sake Madai in all its natural flavors in the form of sashimi (S$13.80) or sushi (S$5.80).

Maruzen Craft Wagyu – Environmentally friendly beef the befits gastronomists 

Volcano A4 Wagyu Don (S$27.80)

From Maruzen Farm, Kagoshima Prefecture, comes the Maruzen Craft Wagyu. The farm rears only pedigree cattle from the Kagoshima wagyu breed. The cattle are fed a special diet of rice-plant fodder fortified with vitamin-rich grass as well as a mix of soybean flour, roasted soybeans, and corn. Hence, their meat boasts an excellent marbling and unmatched texture.

Savor the exquisite meat in the Volcano A4 Wagyu Don (S$27.80). The striploin is pan-fried and paired with a seared A4 Kagoshima wagyu slice. Drizzled with a sweet-salty brown sauce, the beef goes impeccably with the steamed rice. 

Selecta Chestnut-fed Pork – Well-marbled, juicy meat

 

Chestnut Buta Yaki (S$8.80)

Bred in Galicia, Spain, the Selecta pigs grow up on a nutritious diet of cereals and Galician chestnuts. The streaks of fat that run through the meat make it juicy and flavourful. The premium Selecta pork belly is used in the Chestnut Buta Yaki (S$8.80). Presented in the form of skewers, the pork belly is first seared to golden-brown perfection, then used to wrap squid and asparagus. A special sauce pulls all the ingredients together.

A new take on classics

Aki Wafu Carpaccio Roll (S$10.80)

Mini Kaisen Pizza (S$8.80)

Other must-try dishes include the Japanese-style Aki Wafu Carpaccio Roll (S$10.80). The onion slices and spring onion are wrapped with salmon. The wafu sauce elevates the dish with its savory, tart, and sweet note. Another perfect appetizer is the Una Ikura Chawanmushi (S$8.80). Unagi and salmon roe are perched on a wobbly egg custard.

An interesting riff on okonomiyaki, the Mini Kaisen Pizza (S$8.80) is topped with shrimp, squid, and baby scallop. The base is a deep-fried gyoza skin that promises a delightful crunch in every bite. Cap off the meal with the Kuri Shiratama Azuki (S$7.50), whose presentation is reminiscent of that of an oyster. Kuri gelato sits inside an open wafer shell. Aromatic and rich in flavor, the huge scoop of gelato is made with Italian marron and comes with bits of chestnut. Accompanying also is azuki beans and chewy Japanese mochi balls.
