JUMBO Signatures, The New Flagship Premium Restaurant opens at Marina Bay Sands

JUMBO Group’s first premium restaurant concept, JUMBO Signatures, has made its way into the world of upscale dining. Located at The Shoppes at Marina Bay Sands, JUMBO Signatures features Singapore’s iconic flavors from JUMBO Group’s multiple dining concepts. From the ubiquitous Bak Kut Teh stewed to perfection by NG AH SIO Bak Kut Teh, the succulent and flavorsome Braised Whole Abalone with Premium Sauce by Zui Teochew Cuisine to the tantalizing Award-Winning Chilli Crab by JUMBO Seafood, the new flagship premium restaurant combines these quintessential tastes and elevates the Singapore dining experience through tasting menus and sommelier wine pairing.

“Since the inception of JUMBO Seafood over 30 years ago, JUMBO Group has built a diverse portfolio of dining concepts that provide quality and value to consumers through its leading brands. With the creation of JUMBO Signatures, we are entering into the upscale dining market serving Singapore-style premium seafood. But more than that, JUMBO Signatures also presents a collection of iconic flavors specially selected from our diverse portfolio of dining concepts because they represent pride in our Singaporean culture,” says Mr. Ang Kiam Meng, Group CEO of JUMBO Group of Restaurants.


The Signatures Menu

The Signatures Tasting Menu. Their titillating tasting menu refreshes every few months and it comprises an eight-course meal with amuse bouche and palate cleanser for an even more sensational culinary experience. The tasting menu lets the diner enjoys the best of the best Singaporean dishes through a wide spectrum of flavors. 

The Signatures Ala-Carte Menu. Available in small plates, their ala-carte menu offers many classic dishes from starter to soup, meat, vegetables, and seafood. Diners are free to choose several different dishes from the small-plates menu and share them with their guests. 

The Executive Set Lunch. The Executive Set Lunch is a steal at just $58 per person for 3-course and $62 for a 4-course. The set lunch offers a tasty selection of choices.

Kickstart your palate with 2 delicious starters, Freshly Shelled Crab Meat and Conpoy with Egg White (Half) and Scallop Wrapped in Yam Ring. 

For mains, be spoilt for choice with 5 options to choose from. Opt for Chilli Crab Meat Sauce Topped with Caviar, their rendition of JUMBO Seafood’s Award-Winning Chilli Crab. Alternatively, top up $20 to enjoy Chilli Mud Crab Pincer or an additional $10 for the body. For fish lovers, go for Cod Fish Steamed with Preserved Radish and Diced Chilli. Or savor a delicious Teochew favorite, Braised Abalone with Premium Sauce. For meat lovers, the set lunch also offers the crisp and succulent Mocha Pork Rib.

As for rice and noodle, take a walk down the seafood lane and choose between their savory Supreme Seafood Fried Rice with Quinoa, or Braised Vermicelli with Mud Crab Meat with an additional price of $10. 

To end the meal on a sweet note, the 4-course set lunch includes ‘Cheng Teng’ with Peach Resin (Cold/Hot) or enjoy Durian Tart Paired with Ice Cream at a top-up of only $5.


The Stellar Dishes

Chilli Mud Crab Pincer. Savor the familiar sweet and tangy flavors of JUMBO Seafood’s Award-Winning Chilli Crab. The chili crab sauce is made with a blend of over 10 Southeast Asian spices including chili, turmeric, lemongrass, candlenut, and ‘Tau Cheo’. The egg is stirred into the sauce, resulting in a velvety smooth texture. Soak up the addictive sauce with their deep-fried golden brown ‘Man Tou’. The best part? Diners can enjoy the elegantly prepared dish without rolling up their sleeves although the finger-licking good part is hard to resist.

Sliced Luffa Melon in Collagen Soup. The luffa melon is meticulously hand-sliced into thin noodles while the collagen soup is boiled for several hours until it becomes rich and creamy. They are then combined together and topped with fried shredded conpoy, Sakura ebi, and fried shredded ‘Jinhua’ ham. 

Signature Fragrant Rice in Rich Seafood Broth. Fluffy jasmine rice sits in a hot stone bowl, steeped in an umami-rich prawn broth rendered by simmering prawn stock for several hours, and topped generously with freshly hand-shelled crab meat, Sakura prawn, and sashimi-grade Botan ebi. The dish takes center stage at the table as rich, boiling prawn broth is poured directly into the hot stone bowl of seafood heaven to lightly bathe and cook the prawns. On the side, enjoy the lightly fried crispy Botan ebi prawn head seasoned with salt and pepper for flavor. 

Truffle Prawn Ball with Foie Gras. Pan-fried foie gras is wrapped in prawn paste, richly flavored with white truffle oil and chopped black truffle. The prawn paste is folded by hand, coated with bread cube, and deep-fried till crispy, golden brown perfection for a satisfying crunch. The accompanying dipping sauce of fermented bean, tomato sauce, and superior stock complements the fragrant truffle and makes for the perfect bite.


The Signatures Space

The restaurant interior draws its design inspiration from British colonial heritage in the early days of Singapore. The familiar black-and-white features and intricate geometric patterns create cozily sophisticated spaces with a touch of formality.

It has an open kitchen that adds energy to the restaurant setting. It provides an opportunity for diners to get closer to the chefs and watch them in action as part of the dining experience.

The restaurant offers private dining rooms perfect for meetings, intimate celebrations, and every special occasion. Diners can choose a single private room or connecting rooms to seat a larger number of guests.
