These noodles maintain the same springy texture. The soft seaweed adds a silky touch that complements the tender fishballs and meatballs. The inclusion of egg gives the broth a slightly thicker, smooth, and creamy consistency. The seaweed imparts a deeper umami flavor with a hint of oceanic taste, elevating the overall savory profile of the dish.
