1. Ah Hua Teochew Fishball Noodle
We visited Ah Hua Teochew Fishball Noodle at Pandan Gardens and tried their popular dry-style mee tai mak and mee pok. The mee tai mak, though simple in appearance, was rich in flavor from sesame oil, lard, and fish sauce, with an added abalone for a touch of luxury. Their dedication to freshness is reflected in their shorter operating hours and flavorful soup, which includes fish balls, meatballs, herh kiao, fish cakes, and prawn balls.

2. T.K Kitchen - Paofan Paradise
T.K Kitchen – Paofan Paradise is famous for its Teochew-style pao fan, where rice is soaked in a flavorful broth. They have two outlets in Singapore: the Rowell Road outlet, offering individual portions of pao fan, and the Teban Gardens outlet, known for its variety of pao fan and zi char dishes. One of their standout offerings is the Lala PaoFan Hotpot, which features fresh seafood flambéed to enhance its flavors. During a visit to the Teban Gardens outlet, I tried their Flower Crab Pao Fan, which featured a whole flower crab and a rich, umami-packed broth made with pork, fish bones, and prawn stock. The rice, soaked in the flavorful broth, was made with egg-fried rice instead of white rice, adding extra fragrance and wok hei. Topped with crispy rice puffs and fried egg floss, this dish is a must-try for seafood lovers seeking an elevated version of pao fan.

3. N.M. Abdul Rahim
N.M. Abdul Rahim, located at Ayer Rajah Food Centre, serves a flavorful plate of mee goreng. Despite its red appearance, suggesting spiciness, the dish offers a smoky, savory mutton curry taste without being overpowering. The mee goreng is served with green peas, chunks of potatoes, eggs, and slices of cucumber on the side, though the inclusion of peas is a bit puzzling. Overall, the dish is quite enjoyable.
