An Epicurean Buffet Like No Other


Begin your brunch journey with the freshest spoils of the sea, presented in the oyster and seafood on ice section. Seasonal premium oysters await to tickle the tastebuds alongside Tiger King prawns and steamed mussels, each morsel perfect to go with sips of Ruinart. 

Seafood is taken up a notch at the seafood station where daily catch like white clams, spring bay mussels, Tiger prawns, and more can be cooked up to your liking, whether that be poached in cream or tomato sauce, stir-fried with a variety of herbs and spices or lightly seared for natural flavors that shine. Highlights here include the Asari clams and Spring Bay mussels from Australia and juicy little pockets of shellfish that will match your sips of Ruinart note for note in sweetness and complexity.


Meat lovers will relish in the grill carving station, where Wagyu wages a delicious war for your appetite. The Angus Beef Striploin, in particular, is a premium cut with a marbling of perfect 5, serving up a good balance of lean and fat. Choicier cuts are served with the Wagyu Beef Flank and the Wagyu Beef Rump Cap, both boasting marblings of 6 for indulgence with every bite.

In case all the above still does not satiate, look to the side dish section, where roasted la ratte potatoes will go well with the plethora of meats and seafood, as well as confit cherry tomatoes with herb oil, charred green asparagus, and baked cauliflower. For the rice lover, 15 Stamford’s fried rice is stir-fried to perfect smokiness with Jin Long Yu premium rice.

More juicy goodness is served in the rotisserie spit roast section with whole servings of Kuhibarra barramundi, pasture-fed lamb leg, and Bungalow pork loin. The 15 Stamford Signature spring chicken graces the brunch with its presence in all its juicy meat and crispy skin glory. All roasts are made more delightful with sauces like Adobo butter sauce, wood-smoked barbecue sauce, Asian chimichurri, aka miso sauce, lemon butter sauce, and even one bak kut teh sauce. 


In between, the cheese station comes with a fine selection of cheeses that will not leave you wanting for more, like fourme d’Ambert, carefully aged 5-month Comte as well as a 5-month Mimolette. Knock yourselves out further with cheeses like Roquefort, Emmental, and gruyere to Grana Padano, pecorino, cheddar, camembert, comte, reblochon, scamorza, and more, perfect to go with pairings of crackers, lavash, quince paste, grapes, muscatel, and even honeycombs to nibble to your heart’s content. 

They go just as well with the charcuterie and cured fish section spilling over with cured meats and smoked fish galore. Nibble on the likes of premium Jamon Iberico de Bellota and Fermin Chirozo to whet the appetite, alongside the likes of beef bresaola, chorizos, coppa ham, and beef salami. The Norwegian smoked haddock makes for a turn from the ordinary salmon with creamier textures and more buttery tastes.

Greens come in their freshest at the salad section. The Desiree potato salad serves up the best of the red-skinned spuds of the Netherlands alongside choices of Kyuri cucumber apple raita or a classic Mesclun green salad. 

In the Japanese section, freshness is personified with assorted sashimi, sliced and cut to order from varieties like Hamachi, salmon, and tuna akami. Each week, look forward to a fresh whole fish sliced up for you to order, changed out on rotation. Assorted sushi and maki are also available for order, served with the full frills of shoyu, wasabi, horseradish puree, pickled ginger, and the option of lime. 

Now comes the carbs. From the bread and soup section, take your pick from your choice of sourdough, soft roll, milk bun, baguette, dark rye, focaccia, brioche, and more, all to go with a hot soup of the day that will be changed at intervals. 

The live stations will bring the ultimate thrill of choice. At the pasta station, anticipate options like capellini, fettuccine, or macaroni cooked in tomato coulis, aglia olio, or basil pesto your choice. Don’t miss out on the black truffle cream sauce, an earthy indulgence that will transport you right to Italy, complete with shaved black truffle added on the top right before serving. 

At the dessert station, indulge your sweet tooth in options like Valrhona chocolate tart, vanilla crème Brulee, pistachio fraisier, Guanaja chocolate profiteroles, lemon meringue tart, and more. The sweet treats are available next to the ice cream station that offers flavors like chocolate fudge, peanut butter, and Madagascar vanilla to properly satiate even the most discerning sweet tooth.

After a digestif of coffee, there’s still a choice to lengthen on the sweets with petit fours, homemade cookies, and fresh fruits.
