Yin Ji Chang Fen 銀記腸粉店, which hails from Guang Zhou and opened its inaugural outlet in 2018, boasts a rich history spanning over 60 years. I visited their Far East Square location, where they take pride in being Singapore's pioneer in crafting cloth-pulled chang fen, or rice rolls. This "cloth-pulled" technique involves the use of cotton cloth or a large, flat piece of muslin to spread and shape the rice batter during the steaming process. Achieving the thin, see-through quality that defines these rice rolls demands skill and practice.

One of their standout dishes is the Salted Egg Yolk Fresh Prawn Roll (金沙鲜虾黄金肠), where the rice rolls exhibit a delightful translucence, allowing the veggies and prawns inside to be visible. The combination of soy sauce and sesame oil adds a toothsome quality, while the salted egg yolk imparts a savory touch that I found particularly enjoyable.
Another dish that captivated my taste buds was the Claypot Seafood & Fried Egg Tomato Poached Rice (砂煲海鲜炸蛋番茄泡饭). I'm a fan of both po fan and tomatoes, so this tomato-based option immediately grabbed my attention. It arrives generously filled with a variety of seafood, including squid, prawns, and mussels. The seafood proved to be remarkably fresh, and the tangy tomato flavor paired wonderfully with the rice, creating a hearty and delightful meal.
Eager to explore more of their offerings, we also tried Yin Ji's Homemade Dumpling Noodle (银记手工水饺面). The noodles were perfectly cooked, boasting an al dente texture and a satisfying springiness. The noodles came thoroughly coated in their savory sauce, eliminating the need for further tossing. The dumplings themselves were substantial, filled with juicy and flavorful ingredients that added to the overall enjoyment of the meal.
