Okay this one is quite creative? Kimchi risotto✨✨ idk why but the kimchi I bought from sheng shiong is not really spicy! This caused the entire dish to have a really subdued spiciness. Ingredients
  • 1 Cup Kimchi
  • 2 Tablespoon Olive Oil
  • 4 Tablespoon Unsalted Butter
  • 1/4 Cup Risotto Rice
  • 4 cups Chicken/Vegetable Stock
Cooking Directions
  1. Heat the olive oil and butter into a saucepan, sauté the chopped kimchi for 5 minutes.
  2. Add all the rice to the pan and coat the rice in the kimchi. Sauté for a minute or so on a medium heat.
  3. Add enough of the stock to just cover the rice and cook, stirring, until the stock has been absorbed. Continue adding the stock 1/2 cup at a time, and stirring constantly, until it is nearly absorbed between additions. The risotto is done when the rice is al dente and suspended in a thick, creamy sauce, about 25 minutes.
  4. After 25 minutes, wait for 2 minutes and then add the butter into the risotto. Stir until the butter is fully incorporated into the risotto.
