RECIPE: How to make simple Longevity Noodles for Chinese New Year!

As you may be aware, Chinese New Year is almost around the corner.... time flies! I feel like I just started a new job, and it's already Chinese New Year!! I don't feel like I have done anything in the interim. Anyway, this is a straightforward Longevity Noodles recipe. 

Foods prepared and consumed during the New Year's celebration frequently have symbolic meanings that are intended to bring prosperity and good fortune. Some people prefer to eat their Longevity Noodles dry or in soup, while others prefer to stir-fry them with meat and veggies. 

The moniker "longevity noodles" is self-explanatory in this case: the long noodles represent a long and happy existence.

Other than Chinese New Year, the Chinese believe that if the birthday person eats noodles, he will have a long life ahead of him. Noodles represent long life because they are long. This is one of the reasons why birthday noodles are rarely chopped. 

Ingredients: 
  • 1 packet of pad thai noodles
  • 2 tablespoons toasted sesame oil 
  • 3 small cloves garlic, thinly sliced
  • 1-2 tablespoons low sodium soy sauce 
  • Sea salt and pepper; to taste
  • diced green onions for garnish
Instructions:

1) Bring a large pot of water to a boil over high heat.
2) Cook the noodles for about 4-5 minutes.
3) Whisk together the sesame oil, garlic, soy sauce, and salt and pepper, to taste, until combined well. 
4) Pour the mixture over the noodles and toss well to coat. 
5) Garnish with diced green onions and serve immediately. I also made some oyster sauce vegetables and egg to go with the noodles!
