REVIEW: AWARD WINNING CHALLAND DUCK AT ELEMENT @ AMARA HOTEL

Amara Singapore presents the lauded Honey Roasted Challand Duck on ala carte dinner menu at Element on Tras Street from 15 October 2018. 

Imported from France, this lean duck is roasted to perfection for a tender, juicy bite. The duck skin is lightly glazed with honey and seasoned with coriander, cumin seeds and exotic spices, making this Challand duck dish the perfect combination of sweet and savory on a plate.

At the Food and Hotel Asia 2018 Culinary Challenge, a biennial competition where hundreds of culinary talents from around the world showcase their finest skills, Chef Jason crafted his award-winning dish with the incorporation of his Chinese background with his modern European-style culinary methods by using Chinese parsley to elevate the flavors of the French produce. Honey is brushed onto the duck skin to replicate the light sweetness commonly present in Chinese dishes. On top of it all, the duck is slightly smoked atop dry hay for a refreshing and earthy aroma, leaving guests craving for more. A refined masterpiece is apparent from the intricate cooking methods to the presentation of colors and textures showcased by Chef Jason.

The dish is priced at SGD 44* and will be made available from 15 October 2018 onwards at Element on Tras Street at Amara Singapore and is subject to Chef Jason’s availability.
