RECIPE: TOMATO CREAM SAUCE PASTA

Creamy tomato is not really my preferred sauce. I usually eat mine with carbonara. I remembered liking the Granchio I tried at Pocoloco Microbrewery so much. The Granchio was so delicious with every strand of the linguine pasta doused in the pink sauce with shreds of crab meat. So rich but not overwhelming at all! It was truly loved at first bite! I finally decided to make my own version of this! definitely my everyday meal! 

After a google search for Granchio, I saw this easy to make one from smittenglutton. Minimal effort but so so delicious! 

TOMATO CREAM SAUCE PASTA

Ingredients
  • Knob of butter
  • 2 tablespoons Olive Oil
  • 4-5 cloves garlic, minced or diced
  • 1 can Tomato Paste
  • 150 ml heavy cream
  • Pecorino cheese
  • Salt and pepper, to taste
  • I added my own ingredients. Luncheon meat, and mushrooms.
Cooking Directions
  1. In a medium pan, Heat butter and olive oil and gently sweat the garlic until fragrant. You can add in your fav ingredients here.
  2. Add in the tomato paste and let sit above a small-medium fire to simmer for 20 minutes. Be careful not to burn the mixture!
  3. Pour the heavy cream in and stir well until the sauce turns into this yellowish-orange colour. Adjust the taste to your liking with a generous pinch of salt and pepper.
  4. Add cooked pasta and toss it into this creamy tomato sauce until everything is well-coated. If you like, generously grate Pecorino cheese over your pasta.
