How to make Chinese sticky rice at home

Sticky Rice is also known as sweet rice or commonly known to us as Glutinous Rice. Since Singapore is in the circuit breaker phase due to the COVID-19 situation, and the number of cases doesn't seem to falter anytime soon. The amount of time spent at home leaps by bounds and cooking at home seems to be feasible solution now! Why not cook this super popular Chinese dim sum dish? This dish is not only delicious but easy to make too. 

If you don't want to steam it, fret not as you can make it using a rice cooker as well. Just let the rice soak in water in the rice cooker for at least 4 hours before turning it on. Use 2 1/2 cups of water for 2 cups for rice for this. 

The sticky rice will become stickier if it is soaked in the water for a longer period so soak as you deem fit. haha

Ingredients

  • 2 cups uncooked sticky rice
  • 1 tablespoon oyster sauce
  • 1 ½ tablespoon soy sauce
  • 2 teaspoons dark soy sauce
  • ¼ teaspoon sesame oil
  • ¼ cup chicken stock
  • 2 tablespoons oil
  • ¼ cup Shrimp
  • 1 medium garlic, finely diced
  • enoki mushrooms
  • pork
  • 2 chopped scallions

Cooking Directions

  1. Measure two cups of rice and three and a half cups of water into the pot. Let the rice soak for at least six hours.
  2. Cover and Steam for 30-45 minutes.
  3. Heat the oil in a wok over medium heat. Stir-fry the shrimp for 30 seconds. Add the garlic, mushrooms, and pork and stir-fry for another minute.
  4. Add all of the cooked sticky rice next and make sure to break it up with your spatula.
  5. Add half of the sauce mixture next to aid in preventing the rice from clumping.
  6. Mix well to ensure the rice does not stick to the bottom of the wok.
  7. Add the rest of the sauce and stir-fry until the sticky rice is mixed in the sauce.
  8. Garnish with scallions.
