Shimbashi Soba Introduces Traditional Japanese Toshikoshi Soba To Usher In The New Year

The dish — which uses a special recipe from a top Soba Master — is traditionally savored by the Japanese on New Year’s Eve to usher in longevity, good fortune, and health.

Toshikoshi soba (which literally translates to ‘year-crossing noodles’) is a traditional meal savored by the Japanese on New Year’s Eve. The dish is meant to signify longevity, good fortune, and health for the new year. This year, Shimbashi Soba brings the famous Toshikoshi soba to Singapore’s shores to help customers usher in the new year in an auspicious way.

The Toshikoshi soba is made using a recipe perfected and maintained by Soba master Yoshinori Shibazaki — founder of Shimbashi Soba — who has over 40 years of soba-making experience in restaurants around the world. Besides holding the title of "Professional Chef" conferred by Japan's Ministry of Health, Labour and Welfare, Yoshinori was also awarded the title "Specialist Noodle Chef" — a rare honor within Japan’s soba industry.

Seiro Soba ($12.80 net) 


You can choose to enjoy your Toshikoshi soba in three different ways. All three dishes from Shimbashi Soba are available for takeaway only, allowing you to savor the dishes in the comfort of your own homes. For first-timers, try the classic Seiro Soba ($12.80 net), which presents the traditional dish in its most unadulterated form. Enjoy the chilled soba served with a special dipping sauce that’s made in-house to experience the dish as the Japanese do.

Need to warm up from the cold December weather? Go for the Tempura Soba ($21.80 net), which sees the Toshikoshi soba immersed in a flavourful broth that’s both nourishing and immensely satisfying. It comes accompanied by two pieces of golden fried tiger prawns and crispy vegetable tempura. 

Lastly, there’s the Tempura Seiro ($21.80 net). This set brings together the best of traditional Japanese cuisine, with the chilled soba served with a side of special dipping sauce, two pieces of crackling tiger prawns, and wholesome, crunchy vegetable tempura.

If you want to try making the soba at home yourself, you’ll be glad to know that Shimbashi Soba also offers the Toshikoshi soba in raw form — for $25 net, you’ll get two portions of the hand-made buckwheat noodles as well as 180ml of its special dipping sauce. For a complete meal, customers can also opt to add on crispy Ebi tempura at $4.80 net per piece.
