National Day is the perfect time to reflect on the many strengths of Singapore as a country, and leading the way is without a doubt its diversity and differences in people and culture, all of which come together to offer something from every walk of life.

Such is the key takeaway for the owner of White Restaurant Uncle Tay King Huak, who has made countless friends among his many neighbors in their HDB home. Inspired by the many different races and cultures all living together in harmony, he has inspired the team to create a series of new dishes based on their respective cultures, just in time to celebrate Singapore's melting pot for National Day.

This is a milestone for the restaurant, owner, and brand as it marks the first time it is premiering dishes from cultures outside of its Sembawang White Beehoon. To get it right, Uncle Tay painstakingly consulted his friends for tips and tricks so the final product will taste just like how it’s supposed to be. Adding to the diversified excitement is also the return of an old favorite – White Restaurant’s Mala White Beehoon. Fans of White Restaurant’s Mala White Beehoon will be delighted to know that the dish will now be a permanent item on the menu due to popular demand.

Back by popular demand

First served in 2019 for a limited time only, the Mala White Beehoon (S: S$8.90, M: $13.80) is backed by popular demand, bringing the fiery spice of it with it Sichuan peppercorn laced into the restaurant’s signature white beehoon dish. Fans will find comfort in the same signature white beehoon cooked to perfect al dente tenderness in their rich signature stock, this time elevated with mala spice that tingles upon first taste and slowly builds into a mouth-numbing kick. A handful of vegetables and seafood such as prawns and squid add sweetness to the beehoon dish to well remember.

In the spirit of Singapore

In celebration of the melting pot of cultures that is Singapore, get ready to feast on new items that borrow from the many fabrics of diversity. The best thing is that despite the difference in origins and roots, they all go amazingly well together as an accompaniment to a bowl of butterfly pea rice (S$1.50 per portion).

Fresh Prawn in Chilli Crab Sauce

Chinese food enthusiasts will recognize the sweet and spicy satisfaction of the Fresh Prawn in Chilli Crab Sauce (S$19.80). Large juicy prawns are cooked in the quintessential chili crab sauce of chili, ginger, garlic, and a secret medley of other herbs and spices, before being sauteed to a wok-hei finish with chili sauce, tomato sauce, shrimp paste, and eggs for a dish that will have you wanting more through the meal.

Chicken Tikka Masala

Lovers of Indian cuisine will be well tempted by the Chicken Tikka Masala (S$17.80), a chicken dish that explodes with impossible flavors thanks to skinned chicken that is marinated for no less than two hours in a rub of yogurt and Indian spices before pan-fried to a beautiful golden brown. The kicker is the final texture and flavors that the chicken takes after being braised further in onion and diced tomatoes stew.

Deep Fried Mackerel with Turmeric

Malay food lovers will also be satiated with the Deep Fried Mackerel with Turmeric (S$14.80). A serving of mackerel weighing no less than 200g is first marinated with a paste of yellow ginger, southern ginger, and garlic for two hours before deep-fried till golden-brown for crispy bites that reward with juicy fish under the skin. An addition of fried crispy shredded codfish lends an additional crunch for full gratification.

Cauliflower Cheese Bake

For a touch of Eurasian goodness, the Cauliflower Cheese Bake (S$14.80) presents a sight to behold as much as flavors to savor. Colorful cauliflower is first arranged in a rainbow-colored wheel of delight before being baked with cheese atop for eight minutes. It is then broiled with butter and cream poured over it, rendering it creamy and soft for complete indulgence.
