Upon ordering, diners get to witness the restaurant prepare live catch straight from the tanks before they are typically cooked Teochew style. Each pot of lobster porridge is prepared with broth that has been simmered over low heat for no less than four hours, releasing its best sweetness for a bowl of immense comfort and flavor. Other styles of cooking include the Butter Coated, Garlic Steamed, and Cream Cheese, each presenting different ways of enjoying lobster. Take your pick from four types of lobsters: Live Tropical Lobsters ($72: 2pax, $96: 3 pax, $120: 4pax, $180: 6pax, $240: 8-10pax), Live Western Australian Lobsters (seasonal price), Live Southern Australian Lobsters (seasonal price) or Live Boston Lobsters ($78/piece).


Diners can order their newly-launched Lobster Salad ($158 for 4-6 pax) as a refreshing kick-starter. Filled with chunks of meaty lobster, honeydew, cantaloupe, and celery that are mixed thoroughly in a generous house-made mayonnaise sauce, the dish is topped with uni before serving.

A house signature includes the Signature Steven Chicken ($16/8pcs, $24/12pcs, $30/16pcs), named after the founder and creator of the restaurant, Chef Steven Chua. The chicken pieces are kept on the bone and pushed to the ends before being deep-fried. They are then coated in a homemade marinade of marmite and honey sauce before being tossed in sesame seeds to finish it off.

Crabs, a Singapore favorite, are not amiss from the menu with the carefully selected yellow roe crabs served in both Salt Baked Yellow Roe Crab ($120 for 2 pieces) and Teochew Cold Crabs ($80-100 for 2 pieces). Diners get to bite into a mouthful of roe-filled mud crab that has been baked with salt and house-blend spices to bring out the crab’s natural sweetness. 


Further, crustacean lovers also get to savor live Mud Crab (starts from $78) and Alaskan King Crab (seasonal price) that are prepared in all the popular ways of chili, salted egg, steamed with creamy egg white, black pepper, cream cheese or butter coated to meet the cravings of even the most discerning crab connoisseur. 


Clam lovers are in for a treat with the Garlic Steamed Bamboo Clams ($16.80/piece). Extra-large bamboo clams are steamed with little more than soya sauce and vermicelli, letting their natural sweetness shine. Slippery in texture and mineral in flavor, it brings crisp sea flavors to a noodle dish. 

Steamed fish is prepared the traditional way, best exemplified by the HK Style Steamed Soon Hock Fish ($8/100g). Steamed with soya sauce to play up the natural fragrance of the fish, a touch of brine is added with preserved turnips. 

Popular squid dishes include the Seasoned Fried Baby Squid ($23). The juicy little morsels are lightly seasoned and deep-fried to a golden crunch before being served with red onion and cucumber strips for crunch and topped off with a sweet and spicy Thai sauce for a sweet and spicy punch. The Seasoned Baby Squid ($23) will also prove to be addictive, served with wasabi mayo sauce, sweet sauce, and sriracha mayo sauce, perfect for drawing out the delicate sweetness of the squid.
