REVIEW: Good Hawker food in Singapore: Hua Ji XO Fish Head Bee Hoon 华记XO鱼头米粉 - One of the best seafood soup in Singapore

Hua Ji XO Fish Head Bee Hoon 🥣 华记XO鱼头米粉 is located at Old Airport Road Food Centre which is home to many yummy food stalls such as Dong Ji Fried Kway Teow and Nam Sing Hokkien Fried Mee and Hin Fried Hor Fun with Prawn · Beef · Sliced Fish. This XO fish soup stall is such a surprising find! I was supposed to eat at another stall but that was closed and this was a few stalls away from that and they had a snaking queue.

The broth was boiled with fish bones for a minimum of six hours to get this kind of thick, rich, and milky broth. Love that the XO was just a subtle taste and not overwhelming at all which doesn't steal the show from the natural sweetness of the fish. They were also SUPER generous with so many fresh and tender fish slices. They were also not thinly sliced but quite thick.
