Ohayo Mama San Premieres New Menu Headlined by the Negitoro & Salmon Tartare Play Kit

If you have loved Ohayo Mama San’s Japanese-fusion all-day brunch sets, tapas, ramen, and rice bowls, get ready for more excitement as it introduces a new menu, made doubly fun with a host of new engaging items. New items include sets that you can take apart and put together by the ingredients to create your own bites as well as revamped classic favorites from its existing menu. True to its promise of trendy and out-of-the-ordinary dining experiences, Ohayo Mama San presents a new chapter that is as fun for the eyes and hands as it is delicious on the lips. 


Another addition to the Ohayo Mama San experience is the introduction of live bands every Thursday to Saturday. For the whole of September, warm up on Thursday with @yanniruth from 6.30-9.30pm, get jiggy on Friday with @thesamdriscoll from 7.30-10.30pm and ease into the weekend on Saturday with @fengkaiyap from 7.30-10.30pm (lineup subject to change).


Play with Your Food with DIY Kits

Negitoro & Salmon Tartare Play Kit

To really experience your food, Ohayo Mama San encourages you to get literally hands-on in its making with its new Negitoro & Salmon Tartare Play Kit ($48). Create negitoro rolls exactly to your fancy with the kit that comes with chopped and seasoned fatty tuna and salmon belly. Roll them up with marinated sushi rice with Japanese furikake, Japanese togarashi (seven-flavor chili pepper), yaki nori seaweed, tempura bits, ikura, spring onion, and signature mentai sauce. For an additional $25, you may also add 12.5grams of uni (sea urchin) into the mix to finish off your negitoro rolls with a luxurious touch. The Negitoro & Salmon Tartare Play Kit will be available from 16 September 2022.

Signature Mamasan Kyuden


For something more ready to eat, the Signature Mamasan Kyuden ($24) is a sight to behold, serving a medley of sushi rolls on a towering wooden stand. Pick and pop into your mouth two pieces of salmon belly with spicy sauce sushi, two pieces of salmon with mentai sauce sushi, and eight-piece of miscellaneous flavors including shrimp tempura, cucumber, baked eel, avocado, and eel sauce. 

  

Vampire Daiquiri

Mama San G&T

For drinks, and new items bring a Vampire Daiquiri ($22), an enticing cocktail of fine white rum, strawberry juice, and lemonade, served in a rounded glass goblet topped with mixed berries infused with smoke and bubbles. There’s also the Mama San G&T ($22), a smoky delight of Roku Gin, yuzu, and lemon juice, finished off with sparkling water, shiso pepper, and fruit-infused smoke and bubbles sure to quench your thirst.


Revamped Old Favourites

Salmon Obsession Platter

Around-The-World Seafood Platter

New and improved is the Salmon Obsession Platter ($68 for 2-4 pax), a collation of 10 types of salmon creations sure to satisfy the cravings of even the most discerning salmon lover. Try salmon in ways you probably can’t even imagine, like salmon wrapped with bocconcini, salmon belly with nori sauce, salmon aburi mentai, salmon aburi with cheese eel sauce, and salmon wrapped with tamagoyaki, kani stick fish roe and Vietnamese rice wrapper. There are also salmon cubes with orange citrus marinade, salmon with kurage jellyfish paste, salmon belly with wakame seaweed sauce, salmon aburi with spicy sauce, and salmon salad with house dressing. 

For good old seafood, the Around-The-World Seafood Platter ($98 for 2-4 pax) is a solid winner with a medley of seafood airflow from around the world. From Norway, Denmark, and the UK are prime salmon and salmon belly cuts; from Japan, the Hamachi and tuna entice with sweet, buttery slices. Scallops are sourced from Japan, South Korea as well as the USA while oysters come from Canada and Japan. Aka ebi makes its way from Argentina while premium Japanese and Canadian uni complete the set. Have them on their own or with unique dipping sauces of chef’s tartar, signature shoyu, and spicy yuzu lemon sauce. 


Familiar Classics That Never Disappoint 


Amidst the new and revamped items, returning diners can count on familiar classics that remain a menu mainstay.  

The Chicken & Fish Kebab continues to serve up grilled juicy cubes of chicken and fish that are marinated for at least 24 hours with a chef’s special spice blend that includes cumin, five-flavor spice powder, and herbs. Your choice of chicken will come with fries and fish, with baked sweet potato.

The Nori Tacos remains a bestseller with a filling of your choice. In crispy seaweed taco shells, choose from salmon filling in umami creamy sauce and orange tobiko, tuna in a mildly spicy sauce with caviar tobiko, or kani salad with green tobiko.   


Mamasan Riceless rolls

For the carb-conscious, Riceless Sushi Rolls are the perfect indulgence, available in four flavors. The Mamasan Riceless Roll comes with prime fish cuts of tuna, salmon, and Hamachi with cucumber, marinated radish, avocado, kani salad, and ikura. The Naked Roll layers salmon with shrimp tempura, kani stick, cucumber, avocado, kaiware, tobiko, and spicy mayo. Another option is the Forbidden Love of salmon, kani stick, tempura bits, and cucumber with avocado, black tobiko, kaiware, and wasabi mayo. Finally, the Dancing Geisha tempts with salmon, tuna, boiled shrimp, and cucumber topped with avocado, baby radish, ikura, and ume mayo. 

Sweet endings are accounted for with Melt the Chocolate Tokyo Dome, a glistening sphere of milk chocolate that hides under it a medley of sweet treasures. A small cup of hot milk awaits for you to pour over the chocolate shell to melt it away and reveal the sweets inside.
