REVIEW: Good Fish Soup in Singapore: Jin Hua Fish Head Bee Hoon @ Maxwell Food Centre

I have been on the hunt for nice fish soup! Here's another stall discovered at Maxwell Food Centre. Jin Hua Fish Head Bee Hoon specializes in Cantonese Style Fish Soup which is a richer version compared to the Teochew style. The well-established stall has been around in Maxwell for more than 20 years and is one of the famous stalls there. Some of the stalls that you can try there are Zhen Zhen Porridge 真真粥品Tian Tian Hainanese Chicken Rice, and Ramen Taisho. They have another stall with the same name at the Old Airport Road hawker centre but not sure if they're the same. It is not as good though.

You can choose between, sliced fish, fish meat, and fish head to pair with rice or bee hoon.

I ordered the medium-sized Sliced fish bee hoon which comes with this perfectly cooked thick bee hoon with plenty of slices of fish in this delectable cloudy soup. Milk was added to mine, but this is not the default, so you may skip it if you choose. The soup was flavorful, creamy, and milky. It's also really addicting!

They used sesame oil and fried shallots to enhance the fragrance of the soup.


They have quite a number of fish slices in the soup. As with other fish soups, Batang fish was used here. The fish wasn't the most tender and appeared to be overdone, but I liked that the skin was removed. I always choose sliced fish, but most people like fried fish since it soaks up the creamy, aromatic soup, resulting in a more delectable taste.
