I opted for the "Make-A-Mac" option and customized my meal. I chose the regular size with elbow macaroni, a regular cheese base, beef pepperoni, chicken sausage, and a garlic oil topping. For $5.90, you get two cheese options (cheddar, mozzarella, or parmesan), with a 50-cent upgrade for premium cheeses like gruyere, gouda, or feta. Unfortunately, they only had cheddar and mozzarella available when I visited, but the macaroni was generously coated in cheese. 
The shape of elbow macaroni is perfect for holding more cheese sauce, enhancing the creamy experience of mac & cheese. Its curved, hollow structure creates little pockets that trap the sauce, allowing it to cling to every surface. The proteins in the dish, like beef pepperoni and chicken sausage, add a satisfying texture and depth of flavor to the creamy mac & cheese. However, the garlic oil topping was quite subtle and barely noticeable in the overall flavor of the dish. Its mildness was overshadowed by the stronger, more dominant flavors of the cheese.
The "build your own" aspect of mac & cheese at The Big Cheese can be a hit or miss, depending on the choices you make. Since you have control over the pasta, cheese, proteins, and toppings, the final dish is heavily influenced by how well the ingredients pair together. If you select the right combination, like a bold cheese and complementary proteins, it can result in a delicious and satisfying meal. However, certain choices might not work as well—some ingredients could overpower others, or certain flavors might not blend harmoniously.
Though the experience can vary depending on your ingredient choices, it was still a pretty good deal overall. For just $9, the portion size was generous, making it a satisfying and affordable meal.
