Newly Opened Japanese Ramen Bar and Café, Menya Kanae Presents An Ebi Affair with Hokkaido Style Ramen and Ebi Sando


Bringing the taste of Hokkaido to diners with an ebi-epic affair with Menya Kanae! Introducing the newly opened Japanese ramen bar featuring a delectable variety of authentic Japanese classics from rich and hearty Hokkaido-style ramen to Japanese sandwiches think crisp and chunky Ebi Sando, quintessential bar bites, drinks, and more. Menya Kanae’s grand opening is on 15 October 2020.

Located within Novena Regency right opposite the famous Novena Church, Menya Kanae welcomes diners into its bright and cozy space, showcasing a modern-industrial vibe with a Japanese twist. As the sun goes down and the sticky heat lifts, outdoor seating at the high tables become a popular haunt for Japanese beer from $10.00, premium Sake from $22.80, and an array of authentic Izakaya food.


Specialty Ebi Broth

Combining the rich and creamy notes of Japanese-style pork bone broth fortified with the aromatic blend of grinded big prawns, lobster bisque, and a unique, rich seafood sauce imported from Japan to create Kanae’s signature aromatic and luscious ebi broth. Brought to life through a rigorous process and months of experimentation with hundreds of different ingredients, the culinary team has managed to produce a piquant broth that is boiled for four hours and made with premium and quality ingredients that bring out the natural sweetness of big prawns. Oodles of silky strands of fine Japanese ramen noodles pick up the rich broth in each bold and flavourful slurp for an umami oomph.

Bold and intense, prawn lovers should not miss out on Menya Kanae’s specialty ebi ramen! Each mouth-watering bowl features two slices of tender chashu, two flame-seared Tiger prawns, half an oozy ajitama egg, spring onions, beansprouts, bamboo shoots, black fungus, pickled vegetables, and crispy sakura ebi tempura flakes, and finally, garnished with red chili strings – definitely slurp-worthy with its thin, springy ramen noodles! The spice is fueled by Menya Kanae’s Original Red Spicy Paste. Made in-house from scratch, it takes over three hours to produce, using a laborious process to achieve the desired fiery flavor profile and consistency of the paste. This also comes in a non-spicy version, Tokusei Sapporo Ebi Tonkotsu Ramen ($19.80) with the same rich tonkotsu prawn base but without the burn. Relish the full works or dial it down with the classic Sapporo Ebi Chashu Ramen ($14.80) or Sapporo Ebi Chashu Ajitama Ramen ($16.80), also available in both spicy and non-spicy variations.

Featuring Menya Kanae’s signature thick and juicy ebi katsu handmade from 100% Black Tiger prawns. Lightly seasoned with a dash of salt and pepper, the naturally sweet and firm flesh of the big prawns take center stage in each chunky patty of roughly chopped prawn bits and prawn paste for a toothsome munch. Covered in a thin layer of panko crumbs, it is deep-fried till golden crisp. The hefty ebi patty is then sandwiched between two thin slices of grilled Hokkaido milk bread and a layer of homemade tartar with Japanese pickled cucumbers, shredded daikon, gherkin, and onions for balance. Served with a side of house greens and crisp shoestring fries.

Sakura Ebi Kakiage ($5.80)

Thinly cut vegetables peppered with mouth-watering Sakura shrimps then covered in a light, savory tempura batter and crisp-fried until golden and crunchy. Best when paired with a refreshing Sapporo Beer and consumed when piping hot!

Topped with juicy chunks of thick-cut chashu and aromatic black garlic oil. Equal parts flaming hot and tongue-numbing, dig into the sweat-inducing, Birikara The Spiciest Miso Ramen made with two special blends of Red Spicy Miso Paste imported directly from Hokkaido, Japan that imparts a rich herby heat to the broth. Calling all spice-loving Singaporeans, this one is for you!

Mouthfuls of umami goodness for this perfect sweater weather bowl! Using miso paste imported directly from Hokkaido, and topped with four pieces of tender chashu, minced pork, sweet corn, bamboo shoots, black fungus, pickled vegetables, beansprouts, and an ajitama egg. Pull up oodles of springy Hokkaido-style yellow ramen noodles for an authentic slurp of Japan even as we stay grounded in Singapore.
